Popper Stuffed Loaded Western Meatloaf

  • 1 lb ground sirloin
  • 1/3 c minced onions
  • 1 Egg
  • 1/3c plain bread crumbs
  • 2 Tbsp Worcestershire sauce
  • 2 tsp burger seasoning (Olde Thompson)
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp coarse black pepper
  • 4 oz cream cheese, softened
  • 1/2 c shredded jack cheese
  • 1 jalapeño, minced and sautéed
  • 1/2 c AlternaSweets BBQ sauce
  • 1/2 lg yellow onion, halved and sliced
  • 2 Tbsp olive oil
  • 2 Tbsp real bacon pieces

Preheat oven to 375. In a large mixing bowl, combine beef, minced onion, egg, bread crumbs, Worcestershire, burger seasoning, paprika, garlic, and pepper. Mix well. Set aside. In a small bowl, combine cheeses and jalapeño. Spray a loaf pan with nonstick spray. Divide the beef mixture in half. Press half the meat into the bottom of the loaf pan, and slightly up the sides. Spoon the cheese mixture into the middle. Cover the cheese mixture with the other half of the meat, and press the sides to seal in the cheese. Place in the oven and cook 30 minutes. Remove from the oven and use a turkey Baster to remove the grease. Top the meatloaf with the BBQ sauce and return to the oven for 15 more minutes. While the meatloaf is finishing, caramelize the sliced onions in the olive oil. When the meatloaf is finished top with caramelized onions and bacon. Let rest 10 minutes before slicing. Serves 4-6.
